The narrator says, EMILIO'S MUM HAS SHOWN HIM A BRILLIANT AND FUN WAY TO MAKE PITA BREAD WITH HALLOUMI AND PEPPER. EMILIO'S FAMILY IS CYPRIOT, AND THEY COME FROM CYPRUS.

The narrator says, CYPRUS IS VERY OLD. THE ANCIENT CITY OF PAPHOS CAN BE FOUND THERE, ALONG WITH SOME OF THE MOST HISTORIC MOSAICS IN THE WORLD. LOTS OF DELICIOUS FOOD IS GROWN IN THE COUNTRY, LIKE BLACK AND GREEN OLIVES, APRICOTS AND FIGS. CYPRUS IS HOME TO MOUTH-WATERING RECIPES, AND THESE INCLUDE HUMMUS, SOUVLAKI AND KLEFTIKO.

EMILIO HAS WASHED HIS HANDS, PUT ON HIS APRON, AND HE'S READY TO COOK.

Emilio wears a yellow apron.

Emilio says, TODAY, I WILL BE MAKING PITA BREAD WITH HALLOUMI AND PEPPER FOR MY FRIENDS.

The narrator says, AND HE'S INVITED FREYA, DANIEL, AND TERRENCE TO TASTE ONE OF THE INGREDIENTS BEFORE THEY TRY EMILIO'S DELICIOUS CYPRIOT MEAL LATER. WHAT'S THAT?

The narrator says, WELL DONE. IT IS CHEESE. IT'S A SPECIAL TYPE OF CHEESE FROM CYPRUS CALLED HALLOUMI. MAKE SURE YOU'RE NOT ALLERGIC TO HALLOUMI BEFORE TRYING IT.

Daniel says, I QUITE LIKE IT.

Terrence says, I DON'T THINK I LIKE IT.

Freya says, I LIKE IT.

The narrator says, MMM, NOT EVERYONE LIKES IT. BUT LET'S SEE IF EMILIO CAN CHANGE THEIR MINDS, AS HALLOUMI CHEESE IS ONE OF THE INGREDIENTS IN HIS RECIPE.

Ingredients appear on a counter.

The narrator says, YOU'LL ALSO NEED A RED PEPPER, LEMON, RUNNY HONEY, OLIVE OIL, WARM WATER, SALT, PLAIN FLOUR, DRIED OREGANO AND SOME YEAST.

Emilio pours water into a glass dish.

The narrator asks, WHAT'S FIRST, EMILIO?

Emilio says, I AM POURING WATER INTO THE BOWL, BECAUSE IF YOU DON'T PUT THE SKEWERS IN WATER THEY WILL BURN.

The narrator says, AND YOU'LL NEED THE SKEWERS LATER. GET THE BOWL OF FLOUR AND ADD SOME YEAST AND A PINCH OF SALT.

Emilio stirs a clear bowl with a spoon.

The narrator says, MAKE A SMALL WELL IN THE FLOUR. POUR IN THE WATER AND THE OLIVE OIL. THEN, COME ON, EMILIO. MIX IT, MIX IT, MIX IT.

Emilio says, THIS RECIPE IS FROM CYPRUS. MY MUM COMES FROM CYPRUS.

The narrator asks, HAVE YOU BEEN TO CYPRUS, EMILIO?

Emilio says, I'VE BEEN TO CYPRUS TWO TIMES, AND IT'S HOT. AND I LIKE GOING TO THE BEACH.

Emilio takes a ball of dough out of the bowl.

The narrator says, PUT THE DOUGH ONTO THE WORK SURFACE, THEN PUSH AND PULL IT. THIS IS CALLED KNEADING THE DOUGH.

Emilio says, THIS DOUGH IS FOR THE PITA BREAD.

The narrator says, PUT IT BACK INTO THE BOWL. COVER WITH A CLEAN TEA TOWEL AND LEAVE IT TO RISE. NEXT, POP A PEPPER.

Emilio pulls apart a red bell pepper.

The narrator says, REMOVE THE SEEDS. TEAR IT INTO PIECES. PUT ALL THE PIECES INTO A BOWL AND PUT IT TO ONE SIDE.

Emilio says, NOW, IT'S TIME FOR MY VERY SPECIAL INGREDIENT.

The narrator says, AND YOU KNOW WHAT THAT IS. IT'S HALLOUMI.

HALLOUMI CAN BE EATEN IN SALADS, GRILLED IN KEBABS, FRIED, OR EVEN BAKED IN THE OVEN IN LOTS OF DELICIOUS RECIPES.

Emilio uses a rolling pin.

The narrator says, LIGHTLY ROLL EACH PIECE OUT TO MAKE YOUR PITAS, THEN PLACE THEM ON A FLOURED BAKING SHEET AND COVER WITH A CLEAN TEA TOWEL. EMILIO'S MUM IS GOING TO HELP WITH THE SKEWERS FOR THE KEBABS, BECAUSE THEY HAVE A SHARP, POINTY END.

Stephanie takes the wooden skewers out of the water.

The narrator continues, DRY THE SOAKED SKEWERS IN A CLEAN TEA TOWEL, THEN CAREFULLY PUSH THE PIECES OF PEPPER AND HALLOUMI ONTO THE SKEWERS JUST LIKE EMILIO IS DOING. WELL DONE. NOW, ASK A GROWN-UP TO PUT EVERYTHING INTO THE OVEN TO COOK.

Stephanie carries a baking sheet to an oven. She puts a tray with the dough in the oven as well.

A person goes through the steps of the recipe.

The narrator says, IF YOU'D LIKE TO MAKE EMILIO'S PITA BREAD WITH HALLOUMI AT HOME, POUR WARM WATER OVER WOODEN SKEWERS AND LEAVE THEM TO SOAK. ADD YEAST AND A PINCH OF SALT TO FLOUR. MAKE A SMALL WELL AND POUR IN WATER AND SOME OLIVE OIL. MIX IT, MIX IT, MIX IT UNTIL YOU HAVE A DOUGH. PUSH AND PULL THE DOUGH LIKE THIS UNTIL YOU HAVE A SMOOTH BALL.

POUR THE MIXTURE OVER THE HALLOUMI AND PEPPERS AND GENTLY MIX IT. LIGHTLY FLOUR THE WORK SURFACE AND SPLIT THE DOUGH INTO FOUR EQUAL PIECES. The children tie cloths to the branches.

The narrator says, WOW. THAT SOUNDS LIKE FUN. I WONDER WHAT YOU'RE ALL WISHING FOR. NOW, EVERYONE'S WASHED THEIR HANDS AND THEY'RE READY TO EAT.

The children sit at the table.

Emilio says, SO, WHAT DO YOU LIKE ABOUT MY TABLE?

Terrance says, I LIKE THE BLUE BOTTLES.

Freya says, THOSE FLOWERS LOOK REALLY PRETTY, EMILIO.

The narrator says, AND HERE'S MUM, WITH THE COOKED AND SLIGHTLY COOLED TASTY PITA BREAD AND HALLOUMI.

Stephanie carries plates into the room.

Stephanie says, KALÍ ÓREXI. THAT MEANS "ENJOY YOUR FOOD."

The narrator says, WELL DONE, EMILIO. YOUR PITA BREAD WITH HALLOUMI LOOKS WONDERFUL. MUM HAS CHOPPED UP SOME CARROT AND CUCUMBER AND MADE SOME HUMMUS FOR EVERYONE TO TRY.

Daniel asks, DID YOU MAKE THIS YOURSELF?

Emilio says, YES.

Daniel says, WELL DONE.

Freya says, TASTES REALLY YUMMY.

Terrance says THAT'S EXCELLENT AND DELICIOUS.

Emilio says, THIS FOOD COMES FROM A COUNTRY CALLED CYPRUS.

Terrance says, WHOA!

The narrator says, EARLIER TODAY, NOT ALL OF EMILIO'S FRIENDS LIKED THE TASTE AND SMELL OF HALLOUMI. I WONDER IF THEY'LL CHANGE THEIR MINDS WHEN THEY TRY IT IN EMILIO'S RECIPE.
